The Mont, an upscale New American concept from Cousins BBQ owner Jeff Payne and Cousins vice president of operations Jason Cross, is opening in Fort Worth.
The restaurant will be located in a new construction property in the Montserrat neighborhood of southwest Fort Worth at 3729 Saint-Amand Circle, near the intersection of Routes 20 and 820. It is expected to open in the winter, according to the announcement.
Cousins BBQ is a traditional Texas BBQ joint founded by Jeff Payne's parents, Calvin (aka “Boots”) and Beverly Payne, in 1983. Today, with Jeff serving as president and owner, Cousins BBQ has five locations in DFW and two at DFW Airport.
But Payne wanted something more.
“I have long wanted to open a chef-driven, upscale concept in the Fort Worth area, and when I saw this location near the Montserrat neighborhood, I knew it was the place,” he said in a statement. “It's the perfect backdrop for a beautiful dining experience inspired by fresh seasonal ingredients, global travels, nostalgic favorites and our Texas roots, all in a timeless atmosphere.”

The Mont will feature seasonal, chef-driven cuisine by acclaimed chef Michael Duff, who worked at Eddie V Fort Worth for over 10 years and currently works with consulting chef Michael Alt (Emeril Lagasse's E2 Emeril's Eatery, Fish Out of Water, Toyota Center in Houston, The Beast & Co. in Fort Worth and Hotel Swexun in the Harwood District).
The menu will combine traditional and familiar dishes with modern interpretations and advanced techniques, with a flair that pays homage to a golden age of dining. That's a line taken directly from the press release, and it's perfect as it is.
“Our approach is seasonally inspired, refined tradition, using familiar ingredients, modern techniques and global influences,” says Duff.
Menu highlights include house-made pastas, Wagyu steaks and seafood, and are constantly evolving based on seasonal produce, meats and seafood.
Decoration
The 7,400-square-foot space was designed by Fort Worth interior design firm Maven, who took inspiration from the glamorous era of Mad Men, with mahogany wood, leather seating, indirect lighting and a central bar that exudes midcentury charm and stocks premium spirits for classic and inventive new cocktails.
“We hope this concept will bring pride to locals and become a destination for visitors to the area,” Payne said. “We look forward to adding to Fort Worth's fine dining landscape and becoming a friendly neighborhood spot.”
