Apple released the fifth public beta of iOS 18 on August 20, more than two months after the company publicly announced the update. Worldwide Developers ConferenceThe beta update brings several new features to developers and beta testers' iPhones, including customizable home and lock screens, and collapsible sections make it easier to organize the Notes app.
While there are ways to organize your notes using tags and such, they usually only organize the entire notebook, not the contents of the notebook. Collapsible sections help you organize and tidy the content within an individual note, making it easier to find what you're looking for.

Since iOS 18 is still in beta, I recommend downloading it on a device other than your primary device. Because this is not the final version of iOS 18, the update may have bugs and may reduce battery life. I downloaded it on my old iPhone XR to avoid these issues on my iPhone 14 Pro.
Also, keep in mind that this is not the final version of iOS 18. There may be more features coming to iPhones when iOS 18 is released. Apple has announced that iOS 18 will be available to the public this fall, but there is no firm date yet.
If you've downloaded any of the iOS 18 betas, here's how to create collapsible sections to organize your Notes app.
How to Create a Collapsible Section
1. Open a note.
2. Tap the New Note button (a square with a pen) at the bottom right of the screen.
3. Add a title to your notes, such as Week of the Month.
4. Tap ah Click the plus sign (+) symbol in the upper corner of your keyboard to open the toolbar.
5. Tap Heading or subtitle Name the sections, such as Days of the Week.
6. Enter your information under the headings and subheadings.
7. When you tap the space immediately before a heading or subheading, a down arrow appears to the left of it.
8. Tapping that arrow will collapse everything under that heading or subheading.
It's important to note that headings do not collapse into one another, and the same goes for subheadings and titles. However, if you place a subheading under a heading, the subheading will collapse into the heading. Also, if your note has multiple titles, they will all be collapsed under the title.
This helps me keep my notes organized. I use this feature to keep track of my work week and meetings. It allows me to easily look back at what I was doing earlier in the week or remember what was discussed in a 1pm meeting instead of a 1:30pm meeting.
Again, iOS 18 is still in beta, so these features may have bugs or not work properly. There will likely be more betas before the OS is released to the public, so Apple has plenty of time to address any issues. However, there's currently no word on when Apple will release iOS 18.
